We believe chicken soup is good for the soul – and this one is no exception. We start by simmering hand-shredded chicken breast, bell peppers, black beans, and low-sodium stock, then we finish it off with creamy Greek yogurt and white cheddar. A dash of tabasco and black pepper add tang and heat. To complete the Mexican theme, we serve it with blue corn tortillas for casual dipping. Perfect as an entrée or light lunch.
