We love tilapia (properly sourced of course)! Not only is it sweet and flaky, but it’s a protein powerhouse rich in vitamin B12 and potassium. In this Mexican-inspired dish, we lightly roast our tilapia fillets until they’re golden, then serve them on a bed of cauliflower rice with cilantro. To finish, we smother them in a lip-smacking chipotle sauce.

The fish was well cooked and not dry, the sauce was just the right amount if flavor and the cauliflower added a nice side.
