Don’t feel guilty about tucking into our Chicken Parmesan! We’ve given it a healthy spin by swapping out the breadcrumbs and using tangy Italian seasoning. Then we roast the chicken breast and top it with fresh tomato marinara and shredded Swiss cheese. For a boost of fiber and vitamin C, we serve it on spiralized yellow squash.
