Perfect as a side dish or on its own, this wholesome salad is packed with immune-boosting kale and fiber-rich quinoa. For color and texture, we throw in shredded carrots, cherry tomatoes, and honey-toasted almonds. To bring it all together, we add a tangy apple cider dressing.
