Stuffed Pepper with Cauliflower Mash

Not only are bell peppers an excellent source of vitamin C, they’re great for stuffing! In this Mediterranean-inspired dish, we stuff our bell pepper with a blend of ground beef and turkey, aromatic herbs, Parmesan, and juicy crushed tomatoes. We bake the pepper until the skin is soft and blistered, then we sprinkle it with Swiss cheese and nestle it in a bed of creamy cauliflower mash. The jewel in the crown!
